I have always loved going to Greggs and eating their cheese and onion pasties. Honestly, one of my most favourite snacks there is. There is a Greggs near my university, and it basically used to be my second home. I never used to buy lunch and always used to stick to snacks. I know everyone hypes up the vegan roll, but I am in love with their cheese pasties.

Now obviously when the lockdown occurred, university closed. I returned to my hometown where the closest Greggs, even if it was open, is quite a while away. This is how I got the idea to attempt to make my very own homemade pasties. Obviously, there are so many possible pasty fillings out there, but I really wanted to perfect this filling to add to my list of starters recipes.

I tried this recipe multiple times, each time slightly altering the amounts. The ingredients remained the same, but the proportions didn't seem right to me the first few times to create my perfect cheese and onion roll. This Greggs cheese and onion pasty recipe is a pretty good replica of the original, even if I do say so myself.

These cheese and onion pasties are perfect for Ramadan or for a quick snack. These potato snacks can be made prior and frozen. When you are feeling a cheese and onion pastry simply remove from the freezer and allow for the cheese and onion pasties to come up to room temperature before baking in the oven.

This recipe uses cheddar cheese, but it is up to you depending on which cheese you prefer. My family like cheddar cheese so that is why I use it. It is also best to buy blocks of the required cheese and grate it yourself at home. This is because the store grated cheese has other additives in it, so it always tastes nicer if you grate the cheese yourself. However, sometimes I am lazy and just buy grated cheese.

I used to use the readymade puff pastry from Aldi, but it turns out that has alcohol in it, so I had to stop using it. After some research I have found that the Tesco branded and Sainsbury's branded puff pastry does not have alcohol in it, so I am going to stick with using them. You can even make your own, but I have never actually made it. I might attempt it soon.

I made these several times during Ramadan for family. It was something different, so it went down well as usually our starters consist of samosas and pakoras. I made relatively small sized cheese and onion pasties unlike the Greggs ones so they would be less filling and be more like appetizers.

I use one puff pastry sheet to make four pasties. It just makes things easier for me as I can simply fold and cut. When I make it for a family event, I make them smaller and make 8 per puff pastry sheet. I always fold my puff pastry sheet to get even sized puff pastry. I know some people will think that makes me an amateur, but that's the way I do it.

Ingredients

  • 400 g Potatoes boiled
  • 150 g Cheddar Cheese
  • 1 Onions/Pyaz finely diced
  • 2 tbsp Milk
  • 2 tbsp Butter melted
  • ½ tsp Salt/Namak
  • ½ tsp Black Pepper/Kali Mirch Powder
  • 1 Egg/Anda
  • 2 sheets Readymade Puff Pastry

Instructions

  • Peel and chop the potatoes into chunks then add into a saucepan before covering with cold water then allow to come to a boil and allow to simmer for 10-12 minutes until the potatoes soften

  • Whilst the potatoes are cooking, finely dice the onion and grate the cheddar cheese

  • Drain the potatoes and mash until there are no lumps present then add the melted butter, milk, finely diced onions, salt and black pepper before mixing until well combined

  • Add the cheddar cheese and mix until the cheese is evenly distributed within the mixture

  • Cut the puff pastry sheets into 4 equal parts and then add 2 tablespoons of mixture to each before folding and use a fork to create indents to help seal the edges

  • Brush the top with the whisked egg and place on a baking tray before baking at the top of preheated oven at 200°C/400°F/gas mark 6 for 15-20 minutes, flipping over halfway, until golden brown

  • Your cheese and onion pasties are ready!
